White wine storage?

Is there any downside to storing my whites in my fridge until I need them? Say.. up to 6 months or so? As opposed to chilling them a few hours before I need them?

It all depends on how much room you can sacrifice in your fridge. If it is not a problem, you can store your whites there for six months. You do have to keep track of them, because they will deteriorate over much longer time because of the low humidity. I usually put one or two bottles of whites or rose's in the fridge over the holidays just in case. It is easy to forget them, and I'll find them months later. So, if you are going to put a number of them in there, it makes that job more difficult.

One other thing to remember is that most people chill their white wines much too cold. From room temp, modt white wines shouldn't need more than 25 - 30 minutes of chill time. Otherwise, the flavor closes down and the acid and alcohol come to the front. Not good.
