I was checking the WS site and they have an article on Sauternes and Barsac wines from the 'Yquem to some good values. I can't afford the 'Yquem or any of the ones that follow but I saw some good values with good reviews that I may go and picked up just to try them.

My question is, since this are very sweet wines I doubt that I can drink more than a couple of glasses, so I may need to save the rest for another day.

How long will an open bottle last of Dessert Wine? Would it be a couple of days as any other white wine or can it last longer as a Tawny Port for example?

Usually "Yquem" and "value" do not even belong in the same paragraph! The current release of Yquem is the 2001 and that is $450-500 per bottle (750ml) (though their 2002 will be much umm...cheaper....)

If you are worried about not being able to drink it all, they sell many brands in the 375 ml bottle as well.

I've kept dessert wines in the fridge for almost a week and tasted no (or very little) difference. Don't know why but they are the exception to the rule.

Maybe the sweetness... Same I noticed with Port and sweet sherry. But to be on the safe side, I think the better option is to get 375 instead of a 750.

I have a similar (though certainly more basic) question regarding Tawny Ports. I just recently received a bottle of 20-year Tawny, and I know there is essentially no chance that we will drink this bottle within a week.

Once I open this puppy, what is the preferred way to store (fridge?), and how long is it suitable for drinking after opening? I've heard everywhere from a week to six months, and, frankly, both seem a bit questionable to me.

Thanks. And let me say that I really enjoy reading these various threads on the WindBoard. While many topics are way, WAY, over my head, I feel I am soaking up quite a bit by just reading these various topics.

We like to think this is a wine board not a wind board although some of us do blow hot wind now and then. (Wink)
I've had tawny ports last a couple weeks recorked and placed in the refrigerator between drinks. Take it out maybe 20-30 minutes before use to let it warm a bit.

We usually drink up our quality fortified wines including Port and Sherry within a week or so, keeping them in the fridge along the way. We keep opened less expensive ones including, the Dry Vermouth we always use when "white wine" is called for in a recipe, in the liquor cabinet for a month or so. We use all these strickly for cooking, never drink them.

Glad you a finding your way away around the Board and are enjoying it. When you find something that is over your head, ask about it. WW gets asked about his 2 1/2 lapper finishes every month or two. Incidentally that Dry Vermouth I talked about is referred to by certain folks around here as an SW (sissy white). These folks drink only red wine.
