Fruit wines with overpowering flavour

One particular wine we have had difficulty controlling is potatoe onion. The flavour we expected was to be very mild, however the product is highly overpowering. How can we tone down this flavour and correct the nose.

First, there is a forum specifically for winemaking questions.

Second, wine is produced only from grapes.

Third, neither potato nor onion is a fruit.

Fourth, there is no way to tone down onion.
