I know the obvious difference is the type of grapes used to make each wine. I wanted to know the differences in the character of each wine such as texture, body, and taste.

Each grape doth not a single wine make. Each grape can be made into as many styles as there are winemakers. Highly recommend you get a feel for the various major styles for each grape by reading a good book. Michael Schuster's "Essential Winetasting" covers this groung well. It now available from Amazon for under $25 delivered.
