I have received a Peller Estates Vidal Icewine, 1998, Founders Series, Limited Edition. This is a Canadian white wine. Is there any guidance on when to open it and what to serve it with?

The wine can be served after a large meal as a dessert unto itself. They are pretty long lived and should hold 10+ years.
