Fresh simmered asparagus (salted water with pan drippings from yesterdays roast chicken).

Hollendaise sauce for the asparagus.

Roasted red potato wedges, coated liberally with herbs, salt, pepper, garlic infused olive oil.

Semi-home made Aioli for the potato wedges. (I used store bought mayonnaise.)

A bed of fresh Romaine lettuce, lightly seasoned with pepper and lemon juice. Then topped off with home made roast breast of chicken salad.

All served on a warm dinner plate, garnished with some chives and a few shakes of smoked paprika.

Goats Do Roam for me and a glass of water for my wife (who still does not like dry red wine, although I am really trying to push her to keep trying ........).

We thoroughly enjoyed the meal.

Recipe for the roasted chicken salad available upon request.

Sounds Yumilious! I'm trying to do the same with my wife as well. I'm lucky that she will at least try before she makes "the face". so far okay with burgs and beaujolais..... but little else.
