I am planning to serve puerco pibil in a week or so with my wife and some friends. If you are unfamiliar with this dish, it is a slow roasted pork seasoned with aciote paste (annato seeds, allspice, cumin seeds, black peppercorns, habeneros), and marinated in a mixture of this paste, lemon juice, orange juice, and a liberal splash of tequila. It is served on top of banana leaves(which it is also cooked in) over rice. Does anyone have any suggestions for a wine? I was thinking about a shiraz. Does anyone have a shiraz suggestion, or a better wine for this dish?

Hi EZL, and welcome to the Wine Board. The shiraz would work, as would a nice jammy red zinfandel.
