could you let me know the names of califonia juices that I could buy that would produce a dry wine. I have used alicante,barbera,cab.sauvignon and they are all too sweet. also, any tips you could give me on wine making,fermentation process,or any additives to make a better wine would be appreciated. I have not used any additives in the past, but if they will make a more stable wine, I would.

j, your comment is puzzling. Juice does not make wine dry or sweet, that is the job of the winemaker--juice is just raw material.

I supsect you are not doing the fermentation properly, and not letting the juice ferment dry. You need either to get a book about winemaking or to take a class.

The only thing you might want to add to your wine is potassium metabisulfite (sulfur dioxide powder) to protect the wine from oxidation. But again, you need to learn how to use it.

Winemaking, even at home, is not a simple task--if you want good wine, that is.
