Personally, and looking at my own cellar, I'd choose a Tommasi Pinot Grigio. But if you have any doubt about flavorings from sauces, etc., I'd suggest a Sauvignon Blanc.

Those apply to the chicken only. For the salmon, go with a Pinot Noir, although the dill bread may complicate the selection.

I'd still say Pinot Noir for the salmon. I've made salmon with a dill/lemon/olive oil sauce and the Pinot Noir was fine.
