Todays the day whenced all them weener-offn'-shoots gather and act out the meal-time histronics done by Siegfried & Roy's charges.The grand-Kids are so big now (re: adult ) that we've out-grown our lil' abode so we're having it at my daughter and son-in-laws jernt up in Carefree. The mainstays of the menu this year were borrowed from our southern friends. We're featuring a Turducken. Had it in New Orleans over New Years a couple ago and fell in love with it. My daughter is also contributing a Prime-Rib Roast. The others are bringing the usual sides. and I'm also in charge of the wine. Looks like my Zin stash will take it's normal holiday hit. A cajun speciality that's a sensational feature dish. You take a chicken, completely deboned and stuffed with cajun sausage, enclosed in deboned duck breasts, stuufed inside a deboned turkey that is stuffed wif' dressing. The only bones left are in the drumsticks and wings of the turkey. Made in a few kitchens in New Orleans, they are frozen and all youse do is thaw them buggers for two days, plop in the oven for around 5 hours, and VOILA!!! an absolutely incredible treat.You slice across the width and you have this incredinblr melange of flavors and textures. Twere as good as a fowl can git! Agin youse all, happy. I'll post on the stuff when my stomach gets small enuf' fer me to belly up to the keyboard. SNAPPY,HAPPY, HOLIDAYS.
