Last night I opened the last of my stash of Domaine les Pins, Cuvee les Rochettes, 2000.

I like the Cabernet Franc wines of the Loire. This one, however, I love. Not as acidic as most, the wine is medium-bodied, a little silky and truly well balanced among fruit, alcohol, tannin and so on. I believe it sold at $15.

For me, one of the raciest wine and food pairings is Cabernet Franc with calves liver in balsamic vinegar sauce. It worked once again...
