Macaroni & Cheese??

I hear that wine goes with everything, so what would you recommend for mac & cheese? I don't mean the bright orange stuff out of the blue box, I mean homemade macaroni and bleu cheese. I know it sounds weird, but it's a special request. *shrugs*
