Maybe a dry Riesling or Pinot Blanc.

I agree on the Riesling with the Monterey Jack. The roasted red peppers throw a curve though because with them I'd pair a Sauvignon Blanc or a Dolcetto. Maybe to go with both I might suggest a really good Pinot Grigio - maybe a St. Michael Eppan or a Coltibuono, though not a Santa Margharita which is just way too expensive.
