You could try a Crus Beaujolais or maybe even a CDR or CDRV......... Any one of those three would go with the eggplant parmesan.

Not really a simple dish, though. Do you salt your eggplant to remove the water and the inherent bitterness before you use it in your dish?

Oh I'm suggesting French wines with an Italian dish. Then maybe try some reds from central or southeastern Italy - Abruzzo or Puglia.
