For those of you that will be celebrating, I hope you receive a blessing. If I survive the big Easter dinner I'm cooking on Sunday, I will then enjoy a very restful week of vacation! Enjoy, folks!

A very Happy Easter to all of you, too. Doing a totally non-traditional dinner. Judy really doesn't like ham or lamb so I'm doing up a boneless prime rib roast (accompanied by a really great young Cab - yum). Our butcher gave me some very specific instructions for cooking these roasts a few years ago, and we've been doing it his way ever since with fabulous results. You season the roast if you want with some salt and pepper (he doesn't, so I don't). Put it into a high sided cast iron skillet or dutch oven, and then into a preheated 500* oven for 5 min. per pound (but nevcer more than 30 min.). Turn the oven to warm (he said about 200*) and just let it sit for at least two hours. Never open the door until you take the roast out - ever. He said he's left roasts in up to four hours and they always come out rare and juicy. Let it sit for about twenty minutes, slice and eat.
