...to know what people would recomend to go with two different dishes:
1) A Mexican chili beef dish with corn and rice
2) A vegetable pizza (green and red peppers, onions, mushrooms, olives)
Let me know your thoughts....

1) Dos Equis. If it must be wine then a shiraz would be my preference.
2) Salice Salentino, assuning the pizza has a red sauce under the vegetables.

Agree, cerveza with #1 and would go with a Zin or Grenache with the pizza.
