I opened this on Monday night and man was it tight. Showed very little but a very nicely floral, perfumed wood.

I shoved this thing in the back of the fridge and revisited .... Thursday....

What a difference. Bright sweet cherry almost a bit too candied, versus a serious dark fruit, wood is not integrated, tasting very separated, but it has a very elegant feel to it. Good structure but missing somewhat in a vibrancy. Good enough to consume the bottle over a loaf of bread, a bit of sausage, a LARGE salad (trying to be a good boy).

I think I opened this up too early and at least if I did, I should've opened it up earlier in the day.

In my limited experience with St. Joseph (maybe two bottles) I find them tight or tannic at a young age. Maybe open five or six years after vintage?

I'm in Toronto tonight and I actually was craving to open this bottle. To the point that I was looking for a Chapoutier too. Ended up buying a Gigondas [img]http://www.wines.com/ubb/smile.gif[/img]

It's been a year, maybe it's time to look at this puppy again!
