I am looking for the best cheeses to pair with Bordeaux blends in general.

Also, I need to pair cheeses with two different Bordeaux blends,(one mostly Merlot, the other mostly Cabernet Sauvignon)dry salami, french ham, and sourdough bread.

Any suggestions?

Welcome to the board, Sally.
Many cheeses from France, Germany and Holland pair very well with Bordeaux. I prefer the older Dutch Gouda and Edam, but the more sophisticated French styles also do very well. Ask the folks in your gourmet cheese shop what they have from northern Europe and sample several.
As for which wines of Bordeaux to pair with cheese and salami: I like the inexpensive wines for that purpose. Ask your wine retailer what he has in the way of red Bordeaux in the price range of $10-$20 and sample a few. Chateau Les Fiefs de LaGrange, a St Julien, and Chateau LaRose, a haut Medoc, are both in that price range. I actually have the wines already...They are; Verite (mostly Merlot), and La Joie,(90% Cabernet Sauvignon). Thanks for the tips though!

Hi Sallyjean and welcome to the board. My favorite is a triple cream brie St.Andre. This with some water crackers, a good cab and color me satisfied. WW

I ended up with a Gouda from Holland, and Fromager D'Affinois.
