I love those spicy foods, do different wines go with different types of hot?

What would go well with a mexican meal starting off with nachos (with a spicy chili kick)?

And how about a spicy arrabbiata (tomato base, very peppery) sauce over pasta?

Help me beat the heat!

I personally like beer, Tecate with lime, but modestly priced Sparkling wine is certainly an option.
