This one would dry out Seattle in the middle of Winter. Man, if the meat i was eating with it wasn't moist, i wouldn't not have been able to remove my tongue from the top of my mouth. This puppy was dry. The guy who suggested it at the wine shop said It needed to sit after being opened. I did, at first it was very tight with virtually no flavor. Just a bit of fruit. After about 15 minutes, it had a bit of dark fruit scent and taste. After about 30 to 45 minutes, it had a huge peppery aroma and a strong peppery taste, almost no fruit. Maybe it will open up a bit more after a day of being uncorked.

That was tannin, not dryness. Two years may be just a little too soon for a Crozes Hermitage. On the other hand, wasn't the tannin puckering neat? Somes of weuns like that. We are going to have a 1997 with a lamb steak tonight.

Sometimes I kinda like it when the tannins just suck in my cheeks towards the center of my mouth..........

If there's fruit and some acid around with all that astringency, then I wish I had a good cellar so I could lay that sucker up for a while and see what it tastes like in a few years.........

Getting there, but not quite yet......
