Should Gewurtz. be refrigerated? Do you chill all white wine in general, or are there exceptions?

All white table, dessert, and sparkling wine should be chilled to varying extent. Sherry and other white fortified wines don't have to be chilled before opening, but do have to be refrigerated if not finished at first opening.

No, refrigerating it makes the wine too cold, thus robbing the taster of many subtleties. Chilling to 55-60 degrees, yes.

How do you do that without refrigerating it?

Wine cellar, quick ice bucket treatment (not preferred).

You can also pop it in the fridge to get it to the temp you want, about 10 min per degree. So if your room temp is 72, put it in for two hours to get to 60. Or, I'll pop it in the freezer if I want it done faster. You can cool it down to lower and always let it rise in temp in the glass in your hand. Plus, you can see the affect temp has on the tastes and smells as it changes.
