I'm not famaliar with the Alexis, but most Cabs will age nicely for 5-7 years, with better ones still evolving at 10+.

For a 2000 vintage, I'd tuck your bottles away until at least mid-2004. Then, try a bottle every six months or so, and note how it changes over time. When you're happy with how the wine is drinking, increase your consumption.

Remember, in wine there are no definitive answers. The best age to drink a wine is when it tastes best TO YOU. Enjoy!
