Welcome to the board, king. I would like to help you but it is easier to find wine consumption stats by nation than by state. Even though I work in a library I have limited time for researching non-job related info. Maybe kcwhippet who works part-time in the business will know a source.
My guess would be that wine consumption is higher in California (and perhaps Oregon and Washington) and in metropolitan areas like Washington, DC, Boston, New York City, San Francisco and Los Angeles. It is probably lower in the Bible Belt where some religions frown on all alcohol (Mississippi, Alabama, Kentucky, etc.) Then the heritage for some citizens may be beer rather than wine (Wisconsin and other states with German-American or Czech populations, etc.) It would be interesting to see factual data and I'm sure it exists. Just not sure how accessible it is or whether it is collected and sold to the industry.
