First off none of this is chisled into concrete. Medium to full bodied reds (that over 12% alcohol as a rule of thumb) should be served like yours. Light bodied reds such as Beaujolais and Bardolino should be at 60 degrees or lower. White table wines should be served at 55 degrees. Sparkling wines are best at 45-50 degrees. Many if not most dessert wines (high in alcohol and fortified with spirits) are best at 35-40 degrees.
