Wine served still fermenting, is this right?

For the first time in my life I asked for a bottle of wine to be changed. It tasted fine on the first sip but then it became obvious that it was still fermenting. It was a red australian cabernet sauvignon. The posh restaurant, richard bransons Babylon, refused to change it and told us that it was the style of the wine that it should continue to ferment. It tasted dreadful. Is this really a genuine style of fine wine?
