Hi James and welcome to the board. Unless the wines you're cellaring are Champagnes they should never be turned. The build-up you see is probably sediment which is common in all better wines that are bottled unfiltered and/or unfined. Like Jackie said give us the skinny on what you have and someone can give you some good advice. WW
