Hello jareese,

Your tastebuds actually have memories which allows you to taste and remember what things taste like...or should taste like. You are obviously very conscious of wood and if a wine (red or white) is over-oaked it's apparent to you.

My advice to you is to jump out of your box for a few bottles. Maybe buy a nice Alsacian White, Un-oaked Chardonnay or a Sauvignon Blanc.

This will confuse your palate and might give you a fresh start. What I'm trying to accomplish here is to get the wood out of your mouth for a little while.
