Hi Evil, and welcome to the Wine Board. Only cool down your cabernet if it is stored in a temperature above 65 degrees. In that case you would want to get it down there. Figure 10 minutes in an average fridge per degree F. As far as your Hungarian is concerned, give it a shot. We recently uncorked a '95 Croatian we brought home with us, and it was wonderful.
