Though not exactly what you're looking for, I've read two first person narratives/memoirs that talk about the day-to-day life in the business of starting and running a winery. The first is called My First Crush, by Kaplan, who with her husband purchased Panther Creek from Ken Wright in the WIllamette Valley. The other is called The VIneyard, by Hargraves, about starting a vineyard on Long Island. Both give a decent inside look at the day-to-day life.
