As a newbie, I like to take a average mouthful of wine, swirl all around ...up where the gums are....down where the gums are, swallow a little bit, then take in a little bit of air and repeat from step one. I find if you have too much wine in the mouth and you take in some air, you will end up drooling some of the wine from your mouth [img]http://www.wines.com/ubb2/wink.gif[/img]

I would assume that having the wine for too long a time in your mouth COULD prevent ones taste buds from recognizing certain flavors and aromas. Wine is an alcohol afterall, and the alcohol may saturate your buds to the point where it overwhelms everything else. Anyways, that is just my thought!
