The tasting method described is pretty much what I've been doing, but I've wondered if maybe my taste/aroma sensors are so overworked from years of high-voltage chile pepper consumption, that what I need thirty seconds to do, others do in ten. It's good to hear that my time frame is pretty much on target, though I certainly feel like a dork sucking in air and chewing wine around when everyone else is sipping and swallowing....
