Hi again Q and first let me say I have never tasted with Big Bob but the way most of the guys I know taste when they are in tasting mode is this; Take a fairly good mouthful of juice, swirl it around in the mouth to cover ALL the buds, draw in some air and swirl, then spitout the wine.( I've yet to spit ennythin' that comes close to tasting good). Then by rubbing you tongue on your palate and letting the aroma go into your nasal passages you get a real handle on the wine. I personally don't think 30 seconds are too long to hold the wine for evaluation. My style is the 3-G method...Grab, Guzzle, and Giggle. WW
