Sushi often has the hot and salty/spicy sauces; for that, think fruity. The last time I had a night of debauchery by way of sushi, it was Riesling all the way.

By Japanese style meats and seafood I assume you mean tempura. To me, that is more problematic than sushi, 'cause you have to know the strength of the stuff inside the batter. As Brappy said, Spanish might work.

Having said all that, Kirin beer seems to do the job...
