A fancy French restaurant should have a sommelier or wine steward whose job it is to help customers/patrons find the right wine. Perhaps they sell a rose' wine by the glass that is fruity enough to satisfy your girl friend's taste--maybe one from Chinon or Tavel in France or a Grenache or Garnacha from Spain. There is no shame in asking for the advice of the sommelier, and wine by the glass or half bottle is appropriate since you don't drink. They may even be willing to let her taste a sip or two of two different wines before choosing.
(Not everyone likes Champagne).
