You can overchill a white wine. I've heard from a number of people, and I've noticed myself, that a number of things happen to white wines that are too cold. All the fruity flavor goes flat and dull. The prominent impact is from the acid in the wine and sometimes the alcohol. I don't like overchilled white wines.
