Hi Cane and welcome to the Wine Board. You only need to post one time on this board, as we only have one group of responders. You will need a bottle of table wine for every four guests, and a bottle of bubbly for every six (depends on the size of your toasting glasses).

It sounds like wine will be your principle drink since you want to for Hor D'Oeuvres as well as dinner. Detailed group tastings have shown that Shiraz and Chardonnay are the favorites. As near as I can tell they will probably go with most if not all the food too.

Recommend that you see what kind of deal you can get on an Australian Shiraz and a Chardonnay from the same brand. Black Opel and Rosemont are two that come to top of my head. For sparkler, I would go with a Spanish Cava in the Extra Dry bottling. As you probably know "Extra Dry" is actually off dry, while Brut is dry.
