If you do visit the Mosel--plan on an excursion to Burg Eltz (one of my favorite fortresses/castles along with the Heidelberg Schloss). It's so picturesque and in a somewhat out-of-the-way spot near Moselkern (not far from Cochem).
(Fodor's says less than 5 kilometers--3 miles--from Moselkern is romantic Eltz Castle, one of the finest in Germany. The original complex of four separate residences was built between the 12th and 17th centuries, and has been preserved in all its glory. You may need four or five hours to get there and explore it and get back to the main roads. The town of Bernkastel is another favorite along the Mosel. (We often stayed overnight in Traben-Trarbach where rates may be cheaper than Bernkastel or Cochem, etc.)
