Welcome to the board, Sally.
Many cheeses from France, Germany and Holland pair very well with Bordeaux. I prefer the older Dutch Gouda and Edam, but the more sophisticated French styles also do very well. Ask the folks in your gourmet cheese shop what they have from northern Europe and sample several.
As for which wines of Bordeaux to pair with cheese and salami: I like the inexpensive wines for that purpose. Ask your wine retailer what he has in the way of red Bordeaux in the price range of $10-$20 and sample a few. Chateau Les Fiefs de LaGrange, a St Julien, and Chateau LaRose, a haut Medoc, are both in that price range.
