Pairing cheeses with Bordeaux blends

I am looking for the best cheeses to pair with Bordeaux blends in general.

Also, I need to pair cheeses with two different Bordeaux blends,(one mostly Merlot, the other mostly Cabernet Sauvignon)dry salami, french ham, and sourdough bread.

Any suggestions?
