I'm told by someone who's really into it that "the classic" is a book titled Art of Winemaking, By Stan Anderson...and it's only $5

Same source also recommends "Winery Technology and Operations, A Handbook for Small Wineries," if you want something more technical. I'll have to research the price on that one if you're interested.
