I mentioned before that I have been making my own wines and although the beer/wine supply shop will help get approx. alc.%, I would like to have my wine tested professionally for acids, lycopines, exact alc.%, calories or whathaveyou. I primary ferment with stems and wonder what effect that may have as well. any suggestions?
