I would think you could get some information from your fellow winemakers who produce sparkling wines. For instance, try Michael Manz at Mountain Dome Winery in Spokane, WA. He only makes sparklers, and you can reach him by email at manz@mountaindome.com. Or closer to home, try Dan Kleck at Palmer Vineyard in Aquebogue, NY on Long Island.
