I prefer a Chateau-neuf-du-Pape or St. Estephe (a red) with red meat meals that aren't too heavily spiced. It comes in a variety of price ranges, but you won't be buying any will you? As far as pairing with trout, you could have a Vouvray (a white) and I think that would also go well with the brie (so would the 2 reds). You really don't need more than 2-3 different wines in my opinion. I think of champagne as more of a "special occasion" thing, but that's just me! I don't think I'd lead a meal with it either. I am no wine aficionado but do know what I like, hope this is of some help.
