As the former Sommelier / Beverage Director of one of N'Awlins' oldest joints, I've got to say that if the temperature in your locale is above 65F I would go with the darkest, spiciest ROSE you can find (like a Cerasuolo Montepulciano d'Abruzzo or one of the Syrah / Zin based ones out of the Central Coast), ice cold. If you live in the frozen north, go with a Zin or other aromatic varietal. But the truly best solution would be some nice Belgian Beer....
