Not familiar with the 05 vintage but it is probably ready for drinking now or could be held a year or two. Might as well have it in its youth. I liked the semi-dry riesling as I recall and ham would be a good choice. It could also go with roast pork or pork chops or some chicken or cornish hen dishes or fish. Pretty versatile.
