Wine for Wedding-Need Advice

I am in charge of buying the wine for my son's up-coming wedding in Dec. Budget is a bit tight and we need some ideas for white and red wine. A buffet will be served (menu not yet decided- but probably will include chicken, salmon, shrimp and roast beef -maybe). Q. Do I need one type of white and one type of red, or a couple types of each? The reception will be for about 250 people and is being held in a very up-scale museum in the bride's hometown. They are trying to hold down cost and have a simple, but elegant wedding. What do we serve that will taste good, satisfy even the wine experts in the crowd and at the same time not break the bank or look cheap??
Also, someone mentioned to me that SAMS or COSTCO might be a good place to purchase volume wine at a good price. Any thoughts or other ideas? AND... one last thing- how do you determine how much wine to purchase. With 250 attending, I suspect about 175 will partake. Thank you! BKB
