In these parts, we simply fire up the pit, ice down a few cases of beer in washtubs (or your pickup bed), put a bit of Waylon & Willie on the box, kick back and enjoy. Throw whatever's available into the pit - brisket, burgers, sausage, ribs, chickens, whole hog - they won't care. It's a good way to clean out your freezer to make room for the next side of beef. Have some sides of beans, potatoe salad, and cole slaw, with pecan pie and homemade ice cream for dessert. He'll think he's died and gone to heaven.
