I think it's time for you to start choosing the wines with dinner. Since you are paying everyone will follow your lead.

If it's more than 4 people order a bottle of red and a bottle of white to be brought to the table.

I'm hoping they are just being considerate.

You're actually lucky that you are in this situation and not the other way around where they are ordering large and you have to justify your expenses!
