I think Sauvignon Blanc will likely become the next fad wine, as its availability and quality, for both foreign and domestic versions, have both improved markedly over the last couple of years. Close on its heals will be Pinot Gris/Pinot Grigio, which is also coming into its own for its versatility.
As for reds, I think they will likely include quality Beaujolais and Sangiovese.
