Welcome to the board, Bo. A steak cries out for a red, especially a Cabernet Sauvignon. If you think that would be too tannic, look for a Merlot, or a blend of Merlot and Cabernet Sauvignon, such as a St Emilion from France.

If a steak is prepared in a true German manner, a German Riesling can work OK.... but I personally wouldn't risk it on this side of the pond.
